Mmmmmmm Mushrooms!


On Saturday, Monsieur Titi and I went out to hunt champignons (mushrooms). This is a year for cêpes and we found a ton, even though there were other people in the forest hunting too. We found more than we could carry. So on Sunday, Monsieur Titi went back out for a little while and found even more cêpes.

Cêpes or Boletus Edulis, are wonderful, tasty mushrooms especially found in south-west French cooking. They are easy to clean, just cut off any dirt or rotten spots, then brush them clean. If you find that the mousse underneath the caps is too thick, you can cut this off.  Don't ever wash fresh mushrooms as they'll give alot of liquid when cooked. Once cleaned, these darlings can be sautéed up with garlic or frozen as they are in a plastic freezer bag.

This weekend, I also made a delicious apple cake with some windfall apples.

Amazing apple cake
Here's the recipe:
Amazing Apple Cake

 250 grams brown sugar
250 grams flour
1 tsp. cinnamon
1-1/2 tsp. baking powder
2 eggs
125 grams of melted butter
1-1/2 tsp. vanilla
125 grams of walnuts -- chopped
650-700 grams chopped apples

Preheat the oven to 165°C or 325° F.
Prepare a 8x11" baking pan, grease and flour.
Cream together the sugar and the eggs, then add in melted butter and vanilla.

Mix together the flour, baking powder, cinnamon. Add this to the egg/sugar mixture. Mix well then add the apples and walnuts. This will be hard to mix in and you might think that there's not enough batter. But once you get the apples well covered, you'll see that they give off enough juice to make the cake. Spread into the prepared pan and cook 45-50 minutes. Eat warm or cold.

We've had a praying mantis around the patio the last week. This is called une Mante Religieuse in French or a religious mantis. I'm not sure what she was doing hanging around, but with the rain and the colder temperautres, she's disappeared. I'd never seen one so close before.

Isn't that one of the great pleasures...foraging for mushrooms!
Gerard showed me what to pick...and what not...years ago, but I still get that doubtful feeling when I go to a mushroom exhibition and see all those marked with a skull and crossbones!

I am nervous about collecting mushrooms as I do not know one from another. Also at the moment the weekends are not a good time to be in the forests here. Too much hunting going on!! Diane

Sorry I haven't visited in a while ;) I would be terrified of picking the wrong mushrooms and poisoning everyone ! The Apple Cake looks divine & your praying mantis is lovely, too ... we get many here during the rains & ours are mostly bright green in colour.

The apple cake looks truly delicious. Sadly, the wet, cold weather of this past summer meant we had NO apples. Not a one. Sigh!

Hello Dedene !
Philippe et moi n'avons pas eu le temps d'aller en foreêt pour ramasser des champignons.
En général nous y allons en novembre pour trouver des chanterelles. Quelquesfois, je trouve des cèpes sous les bouleaux dans le backyard, mais cette année il a fait si sec qu'il n'y en a pas ou ils sont en retard.

You realize that there are definate advantages to life in the country :)
Your hubby must know the champignon species well. I don't and never would pick a thing!
What was thet praying mantis doing at your home? Maybe it smelled the delish apple cake baking ha!

the mushrooms look fab. We (in Nottingham)have a farmers' market stall that sells OK cepes and mushrooms in boxes with little labels saying what to do with them.

As your other commentors have rightly said, "the apple cake looks great". Miam miam.

I really miss France right now. I always love to go look for mushrooms and pick-up chestnuts, walnuts...
We have been suffering from a heat wave in Southern California. Can't wait for fall to finally arrive.

Je suis allée voir hier en allant à la boîte aux lettres, pas un seul champignon en vue sous les bouleaux, même pas sous la haie de lauriers.

Vraiment cela m’a donné envie. Il n’y a pas de cêpes par ici. Je crois que la dernière fois que j’ai mangé des cêpes était… et bien cela fait si longtemps que je ne me rappelle plus. Le gateau aux pommes a aussi l’air vraiment appétisant. Je vais copier la recette.

I am so very envious. In Australia we occasionally can buy the French mushrooms fresh and in season at about 50 euro a kg! And I always indulge with just a few.

MMMMM is right! I love mushrooms...I've always wished I could go out hunting for them. Are you ever worried you might pick the wrong kind or anything?
